Green Breakfast Nachos (Chilaquiles)

  • Unsalted tortilla chips
  • 1 jar Rio Luna™ Organic Green Enchilada Sauce
  • 2 oz queso chihuahua
  • 3 whole eggs
  • Sour cream, to taste
  • Pico de gallo, to taste
  • Minced cilantro for garnish

  1. Preheat oven to 350°F.
  2. In a bowl, toss tortilla chips in the green enchilada sauce. Make sure all the chips are coated. Place flat over a sheet pan and sprinkle your chihuahua cheese over it. Place in the oven for 4-5 minutes.
  3. In the meantime, cook the eggs to your desire. We recommend fried eggs. Pull out your sheet tray and place the egg over the chips. Add sour cream, pico de gallo, and cilantro as the garnishes to round out your dish.
